Wild Alaskan Salmon Tacos - Fresh from the River
We decided to head south and join the hundreds of other fishermen down on the Kenai River to participate in the subsistence dip net fishery. Little did we know that the day we fished just happened to be an all time record setting day for the number of salmon that swam upstream! Needless to say, he came home with more than a cooler full of fresh sockeye salmon fillets and months of tasty meals. Everyone loves Wild Alaskan Salmon on the grill, and you can cook it up in so many varieties that its almost hard to want to switch it up...almost. We decided to try our hand at making Alaskan Salmon Tacos with one of the fresh sockeye fillets that we had harvested and it certainly did not disappoint! 
Ingredients 1 lb. salmon, skinned and cut into 1 inch cubes 2 Tablespoon taco seasoning 2 Tablespoon olive oil 1 medium yellow onion, chopped 2 limes, quartered 1/2 bunch cilantro, chopped 2 avocados, sliced tortillas salsa sour cream cheese Directions 1. Toss the cubed salmon in taco seasoning and set aside. 2. Heat olive oil in large skillet over medium heat and sautee the onion until soft. 3. Turn heat up slightly and add the salmon to the skillet. Lightly sear the salmon cubes for about 2-3 minutes, turning gently. 4. Squeeze quartered limes over the salmon, give it a quick stir and plate the salmon on a warm tortilla. Serve your wild Alaskan salmon tacos with slice avocado, salsa, sour cream, and cheese.
