Moose Stuffed Peppers
We still have a freezer stocked with moose meat and have decided to try out some new recipes! This one was a hit with our family, even our 10 month old couldn't get enough :)
Ingredients
2 lbs. ground moose
1 big onion, chopped
1 green pepper, chopped
2 tsp. garlic
1 tsp. basil
1 tsp. oregano
1 1/2 cups cooked wild rice
(1) 28 oz. jar spaghetti sauce (it’s the large jar...I think it is 28 oz.)
8 green peppers
Shredded sharp cheddar cheese
Brown moose in Dutch oven; add chopped onion, green pepper, garlic, basil and oregano. Cook until onion and green pepper are tender. Add cooked wild rice and the jar of spaghetti sauce. Let simmer for 15 minutes. While this is simmering wash the 8 green peppers. Cut out a hole in the top around the stems, remove the stem and scrape the seeds out. Place the peppers in a 13”x9” pan and stuff with the meat mixture...filling to the top of the peppers. Sprinkle the cheddar cheese over top of each pepper. Bake at 350 degrees for 40-45 minutes. Serve with a spinach and strawberry salad and crusty bread with pesto.
