Alaskan Salmon Patties Recipe
This recipe was submitted by reader, Virginia St. John. With her husband, Virginia lives in Alaska and is a mother of two young boys. She was inspired by a recipe in Parenting Magazine and modified that recipe to fit her family's tastes. Thank you for sharing this with us, Virginia!
I thought with all of this big game hunting going on, salmon would be a change from the red meat and dig into the pantry. It took me only 10 minutes of prep time, then 10 minutes cooking (since I had to cook two batches). I served the salmon cakes/patties with a salad and brown rice, but they really go with anything. I was just really excited that my kids loved them, especially since they were very reluctant as I was prepping. I made these amazing salmon cakes that even my kids devoured with some of the canned salmon I have stashed in my pantry (thanks to all those salmon caught dipnetting in Knik two years ago!). The Salmon Patties were tasty and so simple to make , a recipe I just had to share!
Salmon Patties
(adapted from: "Parenting's Love in Spoonfuls" cookbook)
Makes:about 10 patties
- 1 can red salmon, skinned and boned (pink salmon can be used; my 1 can=1 1/2-2 cups packed)
- 1/4 cup finely diced onion
- 2 large eggs, lightly beaten
- 1/2 cup Panko bread crumbs
- 2 Tbsp canola oil
- Salt and pepper to taste
- Unsweetened applesauce or plain yogurt for dipping (optional)

I tried this and it was deelish! Thanks for posting. Also, for those readers that don’t have jarred salmon at home….. I just baked a salmon filet, flaked it (watch out for bones!), and made the patties that way. They turned out awesome!
Also, I plugged the recipe into “my fitness pal” and it is very low cal, only about 240 calories per serving (about 3 patties). I served them up with some steamed veggies and the whole meal was very filling and satisfied my craving for something homemade! :) It’s so nice to find healthy recipes that also keep the taste buds happy.
