Spaghetti & Bear Meatballs

This spring the Alaska Life team came home from a successful bear hunt with 3 black bears in tow!  We had the meat processed at Mat-Valley Meats and I used a package of the Italian sausage to make bear meatballs, served with spaghetti.  It was surprisingly delicious! Ingredients 1 lb Italian sausage bear meat 1 cup bread crumbs 1 tablespoon chopped parsley 1/4 cup grated Parmesan cheese 1/4 teaspoon ground black pepper 1/4 teaspoon garlic powder 1 egg, beaten 1/2 cup olive oil Directions 1. In a large bowl combine bear meat, bread crumbs, parsley, cheese, pepper & garlic powder. 2. In a separate bowl, beat egg then add to meat.  Mix well and shape into 12 meatballs. 3. Heat olive oil in a large skillet fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel.  Using a meat thermometer make sure the internal temp reads 160 degrees. 4. Add the meatballs to you favorite spaghetti sauce and serve over noodles.  Enjoy!
