Moose Taco Soup – The Alaska Life
Like a hearty chili this meal is easy and I almost always have items in the pantry. It is also easy to manipulate the ingredients to suit your tastes or use what you have on hand. Another big bonus is that both the prep time and cooking method means this is a quick and easy recipe if you’re short on time or only relegated to what you might have in your pantry at the time. Double bonus? The kids love this recipe and can’t seem to get enough. Give this moose taco soup recipe a try and see how you like it!
- 1Lb. Ground moose burger, browned (or any other red meat, but we prefer wild game such as caribou, bison, goat, sheep, etc.)
- 1 Medium onion, diced
- 1 (15 oz) Can of corn, undrained
- 1 (15 oz) Can of diced tomatoes
- 1 (15 oz) Can of black beans, drain
- 1 (15 oz) Can of navy beans
- 1 (15 oz) Can of kidney beans
- 1 Packet of taco seasoning or 1/4 cup
Combine all of the ingredients and heat thoroughly. You can simply brown the meat and put all of the ingredients in the crock pot on low for 2-3 hours, or if you’re pressed for time, combine all ingredients in a large pot and heat on the stove, simmering for 20 minutes to an hour. The longer the simmer, the better the flavors appear in the meal, but this can be successful with a shorter cooking time as well. Serve the moose taco soup with sour cream, shredded cheese and tortilla chips.
Recipe note: Use any three different kinds of canned beans. You can also add a can of green chili’s or other peppers to add flavor. This recipe is excellent for the crock pot or the stove.
