Easy and Delicious – Smoked Salmon Melts
Canned Smoked Salmon Melts – A simple meal with a great taste!
This spring, as the dip netting season approached, my family and I found ourselves with an excess of last year’s salmon. We had a large pile of fillets vacuum sealed in the freezer and needed to consume them or process them to make room for the next harvest of salmon. We’d never tried canning salmon before, so we decided this was a good time to give it a shot. Canned smoked salmon is now my new favorite thing. It’s hard to beat having delicious ready-to-eat smoked salmon.
With canned smoked salmon the meal possibilities are endless. One of the best things I’ve had are these quick and easy salmon melts. When you’re low on time and want a tasty meal, try out this recipe!
Canned Smoked Salmon Melts
Ingredients (for 2 servings):
2 English muffins halved
1/2 cup shredded cheddar or colby-jack blend cheese
2-4 Tablespoons creamy salad dressing of choice (blue cheese goes really well)
1 pint jar of canned smoked salmon
Toast English muffins. Spread dressing on open side of each muffin and then put approximately a 1/4 cup of salmon on each. Sprinkle cheese on top. Bake in oven at 350 F for 10 minutes then turn to broil for a few minutes to brown cheese. Serve hot and enjoy!
When I’m just cooking for my husband and me, I like to use our toaster oven to make these. Toaster ovens are great for making salmon melts because I can toast the English muffins, put on the toppings, and then place the muffins on some tin foil before putting them back in to bake. There’s plenty of space for the two servings so I don’t have to heat up my regular oven to make them.
